Tomato and Basil Sorbet:

Nothing captures the essence of summer quite like vine-ripened tomatoes and fresh basil. This savory sorbet is a refreshing and unexpected first course, ideal for warm-weather entertaining or as a unique palate cleanser. Light, herbaceous, and subtly sweet, it’s a sophisticated way to showcase garden-fresh ingredients.


Ingredients:
  • 5 fresh ripe tomatoes
  • ½ cup fresh lemon juice
  • 1 teaspoon salt
  • ½ cup simple syrup
  • 1 tablespoon tomato paste
  • 6 fresh basil leaves, coarsely chopped

Instructions:
  1. Prepare Tomatoes:
    Peel, core, and seed the tomatoes. Purée in a food processor until smooth. You should have about 3 cups of purée.
  2. Mix:
    Stir in the lemon juice, salt, simple syrup, tomato paste, and chopped basil until well blended.
  3. Freeze:
    Pour the mixture into the bowl of your Whynter ice cream maker and freeze according to the manufacturer’s instructions.

Serving Suggestions:

Serve in small chilled bowls as a first course or intermezzo. Garnish with a fresh basil leaf or a crack of black pepper. It also pairs beautifully with fresh mozzarella or grilled vegetables.
